What happened with my position after I left

I was asked about companies I worked at before and what happened with my position after I left.

The example I gave was when I worked as a receptionist at Noven Pharmaceutical. I told the person who hired me (she is no longer with the company) that after I left they hired three others to do the work I was doing (front office, mail room, office supply management).
I think the correct response from me should have been.- When I left Florida Community Bank (another one of the companies I had previously worked for) I had written my own job description and created a easy format for the person who came after me. That I had improved the procedures for working as the V.P. of Marketing Assistant, and that the company benefitted from me being there. I think that by answering that I was doind the work of three people at Noven it made the person hire me devalue me from the start. I was seen as a person who would take on much responsibility without complaining. Although I think this is a big reason that I got hired, I might have not had to struggle so much in the beginning. Now under my new boss I am much more appreciated and I have streamlined my current position to fit the job and my personal needs.
